Does anyone have a foolproof recipe for sourdough using white spelt flour? I dont need 100% spelt but the more the better.

I've been making it for quite a while using a regular flour starter and then a mix of regular flour and spelt flour. Its sticky and hard to deal with. I'm thinking if I have the right ratios of water and flour, and the right technique it might work better.

And for challa, I made one with white spelt, sugar, egg and oil. came out good, but I'm still experimenting.

I make this spelt sourdough recipe with 100% spelt flour and it comes out amazing. I do put a little less flour than called for.

300 g water
40 g starter
500 g white spelt flour
12-15 g pink Himalayan salt

I have been using this recipe for a long time. Comes out perfect each time
