What to serve for people who don’t like dark chicken?

I’m iy”h making a simcha soon and will be catering it myself . I was thinking of serving stuffed chicken capons as the main dish. However I know that there are quite a few people who will be attending that dislike dark chicken. So what other nice main dish can I serve using white meat cutlets that can be prepared in advance and be cooked the day of (preferably not having to fry) that is super tasty and won’t dry out when sitting in a sterno for a few hours ?

You can make the same stuffed dish using white cutlets as well

The capons have skin on so it keeps it moist . They don’t sell the white meat that way .

I was thinking stuffed chicken breasts, stuffed with veggies, baked in a separate pan since it doesn't need as much time as legs, with pastrami wrapped around each one so it doesn't dry out too much.

So I thought of chicken breast stuffed with veggies or pastrami , coated with a honey mustard Mayo and topped with crumbs and serve with an optional sauce that I make for breaded chicken cutlets .

Fyi, you certainly can buy chicken breasts with the skin on.

True you can buy boneless with skin. But not butterflied and ready to stuff, with skin staying outside intact.
That might be the best idea to serve, since it does stay more moist.

I’ve never seen boneless breast with skin on.

It is super simple to remove bones from chicken breasts - the bones just pull out with your fingers. It isn't complicated butchering at all.
