cut up in slices and serve over a lettuce based salad
add some carbs as well either in the salad or on the side

Add to bulgur salad, toasted sweet potatoes, nice vinegrette dressing over salad.

Shred it and warm it up with your favorite bbq sauce. Then you can make a chicken pizza, pulled chicken sandwiches or add to pasta.
