Elevating Chicken and Rice Cassarole

I love the homey comfort taste of freshly made chicken and yellow rice, especially straight from the oven
It’s easy and a crowd pleaser

I want to serve it as a 2nd main for Shabbat night
Having a big crowd

Is this too simple of a dish
How can I elevate it to be Shabbat Chanukah worthy

I don't think it's too simple. Maybe I would elevate by adding sauteed onions and mushrooms.

It’s a dump and go recipe
I like doing it in a pyrex but you can use a disposable pan

1 handful each chopped onion, all color peppers, green olive with pimentos rinsed, a few parsley cubes ( some ppl add some raisins, but I don’t like it)
2 heaping cups rice - rinsed well to remove most of the starch
4 cups water
Any seasoning to taste- I add sazón

garlic powder, onion powder, black pepper, and salt

Same seasoning for the chicken pieces skin on bone in, I like using thighs and drumsticks
Lay chicken on top but DO NOT submerge so that seasoning stays on

Bake tightly covered 350 for about 1.5hrs
Open bake for another 20+ minutes so that the chicken gets color

Best served right away, but leftovers are great if piping hot
