So I was thinking of doing fleishigs for the night meals and milchigs for the day meals. Anyone else doing milchigs for shabbos lunch this week as well?

I would only do it if you usually would have milchigs for shabbos lunch. It's just a regular shabbos meal that happens to be on erev shavuos

Probably just keep it simple and just have challah and soup

There is an inyan to have meat on shabbos. So unless there's a specific reason not to, that's what we eat.
