3 day Yom Tov coming up.
Only me & dh
Here’s the thing. I have a super busy stressful week coming up at work.
Didn’t even plan menu or start shopping.

Even though it’s ‘only’ me & dh, it’s still Yom Tov & I like to make nice meals.
Looking for Ideas like one food item which can make 2 different meals . For instance make chicken at same time but 2 dif types of chicken… but more….

Any ideas?

Saute onions with pastrami & mushrooms.

Could mix with orzo, could mix with sauteed green beans & could mix with sauteed cabbage and it can be a filling for eggrolls or chicken rollups.

Saute'ed cabbage you can also divide & use for cabbage noodles.

The saute'ed green beans you can divide & just have with garlic or with almonds or sauteed pepper for other meal.

Steak, London broil, and schnitzel are easy to make right before you eat. Very little prep necessary. You can make white rice and have it plain warmed up or make it into egg fried rice. Mashed potatoes can become knish pie

The pasta you could divide. Use half for cabbage noodles & half for pasta with crumbs.

Make a bigger brisket into pulled beef, use for tacos & for meat pizza.

Grated apples you can use in crumble, turnovers or strudel.

For dairy you can do one pot pasta with different sauces.
Pizza sauce with shredded cheese, vodka sauce with heavy cream for penne a la vodka, cream sauce for fettuccine alfredo, although each one usually uses different type of pasta, you can use one type & with different sauces you can have 2 different dishes for 2 meals.

Creamed spinach one meal, the leftovers you can stuff into pasta shells with cheese or put into lasagne & or lasagna rollups.

Blueberry pie filling & custard-slits & mini tarts.

Cherry pie filling in muffins, turnovers, pies/cakes, on cheese cake.

Ground meat with tomato sauce, pasta with meat sauce, moussaka, stuffed into pasta shells/ manicotti or in zucchini.

Browned ground meat with onions, in taco shell( add taco spice) or on pizza boards.

Do a make your own sushi for a meal or two. Cook the rice. Prep the veggies and/or protein. (We use Nori and cooked Salmon)

Buy spicy mayo/sweet sauce

If you don't own a sushi mat, they sell kits on Amazon which include chop sticks

Ground beef or pulled beef can be used as stuffing in knishes, stuffing in mushrooms, Flatbread topper (buy ready made pizza crusts for extra time savings), mixed with pasta, gnocchi or orzo

Salmon- make your regular recipe and flake half into a salad (make the salmon parve and add feta or mozzarella cheese to the salad and you have a gorgeous main dish)
