Please list your tried and true hamantashin recipe that doesn't need to be refrigerated and can be a one bowl without mixer.

This one is pretty easy.
4 large eggs
1 cup sugar
1 cup oil
1 tsp vanilla
½ tsp salt
1 Tbsp baking powder
4 cups of flour (or more if needed)
Preheat oven to 350F.
Mix first 4 ingredients. Add the rest of the ingredients and mix until fully incorporated.
Roll dough to 1/4" thickness and cut 3.5" circles. Spoon a teaspoon of filling into the center of each circle. Form hamentashen.
Bake until lightly browned, 12 to 15 minutes.
Cool on wire rack.
And just for the record, most of the baking can be done without mixer.

OMG! I just Google a recipe in the meantime and it was exactly this but halved! I halved that again and it came out amazing!
