Challah recipe?

Would anyone mind sharing their yummy challah recipes? I'm getting a little bored of mine and looking for something a little different to kind of mix things up a bit. Thanks!

Pretty much every challah recipe is a mix of the 7 ingredients

Flour
Water
Yeast
Eggs
Sugar
Salt
Oil

Some people use honey or other flours.

Do you want yours to be eggier?
Add an egg.
Heavier?
Add more flour.
Sweeter?
Put in more sugar.
I think adding oil makes it rise better, as does letting it rise longer.

Also if you want more flavor, think toppings.

You can experiment and see what you like. I once went to kosher.com and made a spreadsheet with all the challah recipes to see what the differences were. There wasn't much a little more this a little less of that it's basically all the same thing.

Sweet challah

4 T yeast
6 c water
1 c sugar
Let rise

6 lb flour
3 eggs
1/2 c oil
1 c sugar
1 T salt

Rise, braid, bride, bake

4T instant yeast
1 Heaping cup cup sugar (original recipe was 1.5c)
5lb flour (I use ww blend)
turn mixer to low
Add
2 eggs
5 cups warm water slowly
Mix
Add 1 cup oil
3T salt
Mix for 10 min., rise, braid....

Mine goes over well... Not particularly strong in any direction

Stir gently together
2 cups warm water
5 tbsp yeast
2 tbsp sugar

While it rises mix

3 eggs
2 tbsp salt
1/2 cup oil
1 1/4 cups sugar

Then add 2 cups flour, mix. At this point the yeast should have doubled or its dead. Add yeasty mixture, mix.

Alternate adding the rest of a 5 lb bag if flour and 3 cups of water, mixing between additions.

Then mix 10 min, rest 10 min, mix 4 min.

Take challah and let it rise at least an hour. Sometimes I deflate it and let it rise again.

Sometimes I let it rise in 4 sections, one for each pan I will bake on.

Let it rise at least 45 minutes after braiding.

I bake on baking sheets about 23 minutes, 8 challos.

Rebbetzin Kanievsky's. But from the biography. Use bread flour. Start with 5 lbs. and add handfuls as necessary. When I make it with sugar I use about 1/4 c. or so less than required.

People love my challah, and get very surprised when I tell them there are no eggs! (and less sugar and oil than most) Not for allergy reasons, but for halachic - hamotzi status. Simplest recipe, delicious as ever.

3 Tbs. yeast
a bit less than 3/4 cup sugar
5 cups warm water

1 cup oil
1/4 cup salt
a bit less than 5 lb. high gluten flour

Whisk together yeast, sugar and water.
Mix together with flour, oil and salt.

Rise one hour, roll, rise another 1-1.5 hours. Bake.
