Idaho is by far the best.
I am so sad that you can't find them in Israel! I've been looking for them for 7 years now, and no one seems to have any idea. *sigh*

I always use Yukon gold. Think they are best for latkes!

I use red skinned potatoes and don't peel them and they work great. I imagine Yukon has a similar consistency.

I only use yukon gold. I don't like the way idaho potatoes turn brown the second you turn around. I know it doesn't affect the taste but the color is so unattractive. Just a personal preference.
