Crispy Pesach Cookies

2 eggs
1/2 tsp. salt
1 tsp. vanilla sugar *can leave out
1 cup sugar
3 cups ground nuts (walnuts, almonds, etc. - can combine dif. types)
coconut (optional)

This recipe can be mixed in a bowl by hand and can be frozen.

Beat eggs eggs, salt, vanilla. Add sugar, nuts, coconut. The mixture will be thick. Drop onto a greased pan by small spoonfuls. Bake at 350 for 15 minutes or until golden. Let harden before removing from pan.

Makes 4 dozen in 2 cookie sheets.
We all loved this recipe, I made it twice last year.

I didn't have goo luck with making cookies last year, so I'm not bothering this year - but sleepless, if you're making them, remember to buy cookie sheets !

I made a few without the vanilla sugar, there was no big difference maybe just a bit less sweet.

I know this is an old thread, but I just tried these cookies and they are AMAZING! I am now in a big rush to get them in my freezer before I eat them all up by myself. I made them with vanilla, instead of vanilla sugar and ground walnuts. I seriously would throw out all other cookie recipes and just make these. Easy, non-gebrokts, no potato starch, no mixer...what else could you want? Try them now!

we generally don't like much of the pesach food that other ppl rave about. I'll make half a batch, nuts are pretty expensive.

the half a batch that I made before dinner was so good, I made a full batch of it after dinner! I used up all the nuts in the house making the full recipe of it !

the first half batch were plain, without vanilla or coconut and just with ground nuts. I think they'd also look pretty with half a walnut on top.

the 2nd, full recipe, was with the rest of the ground hazelnuts (2 cups) and a cup of sliced almonds.

I used shallow baking pans since I wasn't counting on baking and did not buy cookie sheets. I also had to oil the foil since I didn't think to buy the spray stuff.

anyway, it's definitely the Pesach food of the year, in our house !!!!!!!

This looks great!
So far I have 2 potato starch free recipes for Pesach. (This and bashinda's choc torte.)
Does anyone have any more really good recipes for me without potato starch?

I think I'll be joining you this year in making just these two baked goods. LOL Though I am still trying to get the recipe for some yummy carrot muffins that I tasted, that are made without potato starch. (Made basically from ground nuts.)
