salsa chicken might meet your needs - take any chicken you want, dump it into a pot or crockpot, pour salsa over and cook on high or low depending on how soon you want to eat. can vary the salsa - hot, habanero, medium, mild, verde, pineapple/mango/peach (if you change your mind on sweet). when the meat is cooked through, shred with forks and fish out bones as needed. serve on rolls, in taco shells or tortillas, on top a salad or rice

Shredded Chicken
This recipe tastes like pulled beef, and it's much cheaper! If you don't have the smoke flavor, I would recommend going out to get it for this recipe. It really adds a lot.

Cut onions
Julienned carrots
Bone chicken
BBQ sauce
Smoke flavor (not too much)
A little honey

Put everything into a crockpot and cook for about 6 hours on low (or for less time, on high).
Shred chicken (remove bones and skin) and return pieces to the crockpot for 10 minutes, or longer.
Eat in tacos, on rice, in a sandwich, or however you want.
Delicious and easy!

My family’s favorite cutlet recipe

First make the spice mix. You can make a lot in advance and save.

SPICE MIX

▢ 1 tablespoon chili powder
▢ 1 teaspoon cumin
▢ 1/2 teaspoon paprika
▢ 1/4 teaspoon garlic powder
▢ 1/4 teaspoon onion powder
▢ 1 teaspoon salt, or more to taste

Then mix a tablespoon or so of spices with a little oil. Shmear all over the cutlets. Bake uncovered for 35-45 minutes until just done and still moist.

About 1 Tb of spices mixed with a Tb of oil makes about 2 cutlets. So adjust as needed.

If you have the spice mix already saved in a spice bottle then it’s so quick and easy.

The spice mix is delicious on roasted cauliflower too.

Mediterranean Chicken

Any cut of chicken you like. I use a whole chicken, cut into pieces.
1 can of cubed or pulped tomato sauce.
1 cup of pitted green and black olives. The better quality the olives, the better this will taste.
3 sprigs of fresh rosemary.
1 box of mushrooms, broken into olive size chunks (break by hand.)
Salt and pepper to taste.
Pinch of red pepper flakes, optional.

Bake at 425 F (around 225 C). Halfway through, check to see how the liquid is doing. If it looks like it's drying out, you can add water, tomato juice, chicken broth, or red wine. You don't want it soupy, but you don't want the bottom to burn, either.

This is really good the next day, because the flavors just get more intense.

Serve with rice or egg noodles if you are eating carbs. Serve with oven baked zucchini if you are doing keto.

Oh cool! I wasn’t sure if the concept “existed” and I was just googling because I thought it would be a good idea 😂 but all I could find was Alfredo recipes and then finally found this! Making it tomorrow iyh 😊

I make a chicken ala penne by sauteing chicken cutlet chunks with lots of garlic, tossing it with cooked penne, olive oil and spices to taste and some cooked green beans in the same bowl.
Very refreshing in the summer especially.

Put chicken cutlets in a crock pot, cover with bbq sauce. Cook on low for 6 hours. Pull the chicken. Serve over rice, mashed potatoes or incorporate into a sandwich
