Cooking frozen meat/chicken then refreezing

Can I defrost meat/chicken/fish for yontiv cook it now (so I don’t have to do as much close to the holiday) and then refreeze it?

Yes. You can't defrost and then freeze again raw, but you can freeze again once it's cooked.
