hey ladies,
im looking for a pickled fish/salmon recipe. something that has a bay leaf, peppercorns, red onions - but im not sure what else!
only delicious, sweet/sour & tangy may apply!

There is a really good Salmon Teriyake Recipe in the Kosher Palette One - but it has to be broiled so only tastes good fresh, wouldn't make it for shabbos day. It isn't so sweet and tangy but it tastes good and whenever I have guests over they rave about it.

OK I slice the fish slices in half for more of a gefilte fish size portions. Here goes...
4-5 slices appetizer sized salmon filets
1 large onion sliced
3/4 c sugar
1 cup water
1/4 cup white vinegar
1 t salt
pinch pickling spice
3 whole cloves
3 bay leaves
use a large dutch oven type pot. cook onions w/sugar on a medium flame until sugar is carmellized. Add water, vinegar and spices. bring to a boil. Lay in fish slices -- they may not be completely covered. simmer for 25-30 minutes. Serve cold.

I got this delicious recipe from a friend and since then I make it a lot - its a favourite adn we never get fed up of it!
This recipe is best prepared 2-3 days in advance to allow the salmon to marinate and absorb the taste. I make it on Wednesday - it gives me a headstart on my shabbos preps.
I buy salmon fillets - this recipe is for 6 fillets.
Cook the salmon for 10-15 minutes in plain water and cool.
Mix the following well for the sauce:
1/2 cup water
1/2 cup mayonaise
1/2 cup vinegar or lemon juice
1/2 cup sugar
5 bay leaves
1 thinly sliced onion
Cover the fillets and fridge until serving.
Super easy.
