The Cherry Coffee Cake

The Cherry Coffee Cake

Cake:
1 cup sugar
1 stick (1/2 cup) margarine, softened
1 cup pareve sour cream or mayonnaise
2 eggs, checked for blood spots
1 tsp vanilla
2 cups flour
1 1/2 tsp baking powder
1/2 tsp baing soda
pinch salt

21 oz can pie filling, cherry or other

Topping:

1/4 cup flour
1/4 cp sugar
1/4 cup chopped pecans (optional)
1 tsp cinnamon or mixture of cinnamon and ginger if you like it
3 T oil

Preheat your oven to 325 deg.

Cream your sugar and margarine and then add the sour cream or sub., eggs and vanilla. Mix well then add your flour, b.p., b.s., and salt. Continue to mix until smooth.

Spread half of this batter into your greased 9 by 13 or Bundt pan. Open the canned filling and pour it on top. Carefully spoon the rest of the batter on top of that.

Mix your topping ingredients in a little bowl and sprinkle on top of the cake. Bake 45 to 50 minutes or until toothpick tests clean and cake is golden brown.

You forgot to include that the flour should be sifted for bugs. Especially during the hot summer weather.

The flour should be purchased fresh. Sifting flour changes the texture.

Even fresh flour that you buy during the hot summer months can be infested.

I buy BEFORe the summer and freeze it. never had a problem.
