Breadmachine- ingredients in recipes

For those who make their own breads in a breadmachine- what kind of yeast and flour do you use? A certain kind, or just regular?

And what do you do with the "milk powder" that I see in almost every recipe I look at- skip it? substitute it? with what?

Any recipes would be appreciated too!

I get bulk yeast about twice a year. I used to order it from king arthur but you can get them at the shuk too.

I use whichever yeast is the cheapest, I think they all work just about the same. I also use the cheapest, unbleached flour.

My bread machine came with a recipe for French bread (try to post it later) that is pareve. I never did the one with milk powder. I am not sure what it's for. You can use just about any bread recipe in the machine. I love baking bread. Lately I have been using my kitchen aid to knead the dough. Then I bake it in a loaf pan in the oven. I don't like the consistency of the bread when it's baked in the bread machine.

I buy those little jars of yeast. I usually buy the one for bread machines. And I buy regular white flour.
I skip the milk powder and it comes out fine.

the bread machine books reccomend red star yeast. if using others (like fleishmanns) they reccommend adding an extra teaspoon.
most of my recipes call for milk-not milk powder- so I use soy milk.
as for flour, I use the bread flour cuz I have found it does make a difference in the results, the reason for this is the amount of gluten in the flour varies all the time.
I did take a class w/ King Arthur Flour and they say that their gluten is consistent, so u can use their brand too.

if you want, I can post some of the recipes. choose from:
basic white bread
brown baggers sanwich bread
anadama breadheavenly whole wheat bread
oatmeal bread (my personal favorite)
sally lunn bread (very sweet)
buttermilk bread
egg bread
easy potato bread

whole wheat and white flower recipe:
1 cup water
3 Tbsp oil (I use extra light olive oil)
3 Tbsp honey
1 tsp salt
1 egg
1 cup whole wheat flower
2 cups white flower
1 3/4 tsp dry bread machine yeast

Spelt recipe:
3/4 cup water
3 Tbsp oil
4-5 Tbsp rice syrup (found in any health food store, probably apple drug too.)
1 tsp salt
1 egg
3 cups whole spelt flower
1 tsp (on the generous side) dry bread machine yeast

(put ingredience into machine in this order.)

Thanx everyone!
I'm going to try just the regular yeast for now- the triple action 3 pack, I have no idea what the brand is, but my breadmaker came with a coupon for a free one, so I'm assuming it's fine.
All the recipes I see have bread flour- but I found the measurements to substitute all purpose flour for it on recipezaar.com.

Shanie, what kind of diff results do you see with the bread flour? is the dough a better consistency? does it taste the same?

I would love recipes for sandwich bread and oatmeal bread! What is potato bread??? shock I would love to experiment with that one too.

the bread rises better (for me) w/ the bread flour. I used to have more flops when using regular flour. taste is the same if it rises properly.

what size machine do u have. 1 lb or 1 1/2 lb? the recipes I have give measurements for both.

I think my machine can make up to 2 lbs. it has different settings but I've never tried it yet.

I'll give u the 1 1/2 lb amounts.

brown baggers sandwich bread:

1/2 cup soy milk
1/2 cup water
1 egg
3 tablespoons wheat germ
2 tablespoons instant potato flakes
1 1/2 teaspoons salt
1 1/2 tablespoons oil
3 tablespoons sugar
3 cups bread flour
2 1/2 teaspoons (fleishmanns) yeast

put ingredients in machine in the order listed. use light crust setting, regular bake cycle.


potato bread:

1/4 cup instant potato flakes
3/4 cup milk
3/8 cup water
1 1/2 teaspoons salt
1 1/2 tablespoons margerine
1 1/2 tablespoons sugar
3 cups bread flour
3 teaspoons (fleishmanns) yeast

light crust, regular cycle


oatmeal bread:

1 cup oats
1 1/2 cups soy milk w/ one tablespoon of vinegar added to it (in place of buttermilk)
3 tablespoons honey
1 1/2 teaspoons salt
2 tablespoons margerine
3 cups bread flour
3 teaspoons (fleischmanns) yeast

light crust, regular setting (can also use settings for sweet bread, rapid bake and whole wheat.

when putting ingredients in, make sure the salt doesn't touch the yeast. it will kill it. once mixed in, its fine.

as for the flour, you should fluff it up first or spoon it into the measuring cup rather than scooping it out of the bag.

oh nice thread. Thanks GR! I still hven't gotten used to my bread machine. I don't like how it comes out of the bread machine so I've been baking it in the oven. I keep on wanting to make rolls but haven't done it yet. Thanks shanie5 for the recipes!

All my bread machine recipes call for gluten - does anyone know where I can find kosher gluten? Ive tried just skipping it and the texture comes out weird.

I found it near the bread flour at the supermarket. the brand is Hodgson mills (I think) and its called "vital wheat gluten". the box is noy very big- about 1/2 the size of a box of baking soda.
