Don't know where this recipe is from...I got it from my MIL who got it from a friend...neither of them read AMI!
Strawberry Bundt Cake:
2 cups all purpose flour
2 cups sugar
1 tsp salt
1 tsp baking soda
3 eggs
1 cup oil
1 tsp vanilla
1 cup pureed strawberries (to puree, throw into the food processor)
Mix flour, sugar, salt and baking soda. Add eggs, oil and vanilla. Mix well. Add strawberries and mix in with a spoon. Pour into a greased and floured bundt pan and bake on 350F for 45mins-1hour.
Glaze:
Mix about 1 cup confectioner's sugar with a few tablespoons of pureed strawberries. Spoon over cooled cake.
Can be stored in the fridge.

Fruit drink/compote
1 bag strawberries
1 can pineapple bits/chunks
2 kiwis
1/2 banana
1/2 cup orange juice
1/2 cup or less sugar
Blend finely or leave small fruit pieces. I often double or triple the recipe. Enjoy

strawberry short cake ...
which is really a sponge cake, some whipped cream, & cut up strawberries with enough sugar to let it macerate ... saving some whole ones to decorate the top

I love this recipe. It really tastes milchig, even with milk substitute. The ancient cookbook I have it in has you freezing the egg yolk mixture for an hour or so, taking out and mixing, then mix the whip and combine. You can also at that point add the strawberries.
Re the strawberries: labor intensive but clean and freeze, then thaw and drain first. Use about one pint.
BTW, no need to rush with the strawberries. If you can't decide how to use them, or use them all, clean and freeze till inspiration strikes.
