does anyone have a receipe for egg noodles for the chicken soup for pesach id be most grateful

My mother makes regular eggs like an omelete when its done just cut it up like noodles

my mom makes regulary eggs but adds a little potato starch to the eggs then rolls them up and cuts them in strips

bring soup to a rolling boil n slowly add very well mixed eggs

That is what I do. Make them very thin and you can even fry it w/o oil in a nonstick pan.

Do you have to finish the noodles that day or can they sit in the pot for a few days. Basically do they get soggie and not good from sitting in soup for a while. I have been wanting to try it for a while but didn't know how well they would last. The fried kind are put in individual bowls right before they are served.

beat eggs with salt in one bowl
beat potato starch with cold water in a second bowl until dissolved
mix together... mix continuously so that starch doesn't settle.
fry in greased pan.. regrease pan between batches.
cut into thin strips
and taste best fresh, but is ok when it's not (but I don't think it will last over night it the soup, add it as you need it to each bowl)

Little tip: to avoid greasing pan between crepes, add oil to the batter. It should stay greasy as long as you stir batter between batches.

We make chinese chicken dishes using the noodles.
You can also use the noodle recipe to make blintzes.
