Healthy parve/dairy lunch ideas

My kids are not allowed to bring meat or nut products to school for lunch, and I can't have soy for the moment.

My kids are pretty good eaters. They'll eat most whole fruit that I send, yogurt, eggs, etc., but I've caved to the "everyone has it" for juice boxes and feel like my lunches are all pre-packaged junk. Typical lunch is apple, juice box, hard-boiled egg or string cheese, yogurt + crackers or cream cheese sandwich. I used to send vegetables every day but they came back almost every time. How can I send vegetables so my kids will eat them?

I love looking at all the great bento lunch ideas out there, but almost everything involves meat or soy! Or the food is very ethnic and totally foreign to my kids.

How about lentil burgers or falafal. Do you have a thermos? I send my kids hot soup or mac & cheese also. You can also send tuna burgers, tuna casserole (in a thermos), etc.

what about squash mac n cheese warm in advance, or veg sticks that they can dip into chumus cream cheese or salad dressing
