My dh LOVES pesach cookies and cakes but I've had NO mazel yet in making them. I only use potato starch and cocoa before Pesach starts so whatever I make has to hold up well. Suggestions please? The only thing I've thought of is meringues.

Chocolate Cake

9 eggs, separated
1 ½ cups sugar
1 cup oil
2 tbsp. vanilla sugar
½ cup cocoa
7/8 cup potato starch
Pinch salt
1 tsp. baking soda
1 tbsp. coffee (2 if you like it stronger) dissolved in 1/3 cup water

Beat egg whites.

Mix everything else together and fold into whites. Bake in a greased 9 x 13 pan at 350 for 50-60 minutes.

Marble Cake

6 eggs
2 cups sugar
1 cup oil
2 tsp. vanilla
2 tsp. baking powder
1 ½ cups potato starch
½ cup chocolate syrup

Mix first six ingredients. Pour two-thirds of mixture into a 9 x 13 pan. Add chocolate syrup to remainder of mixture. Pour chocolate mixture on top and marbleize. Bake at 350 for 45 minutes.

Pesach Blondies

1 cup potato starch
¾ cup oil
¾ cup ground nuts
¾ cup brown sugar
¼ tsp. salt
3 eggs
1 tsp. vanilla sugar
1 tsp. baking powder
¾ cup chocolate chips

Combine everything except for chocolate chips. Sprinkle chips on top (if you mix them in they sink to the bottom). Spread in a greased 9 x 13 inch pan and bake for approximately 40 minutes at 350.

Yellow Cake

10 eggs, separated
1 cup sugar
½ cup oil
¾ cup potato starch
1 tsp. baking powder
1 pkg. (3.5 oz.) instant vanilla pudding mix

Beat whites. Beat other ingredients and carefully fold into whites. Bake in either a lightly greased tube pan or
9 x 13 pan at 350 for 1 hour.

Do I understand that you don't use nuts because if you do I have a good recipe for a chocolate hazelnut slice that if it fails just gets more gooey, but still very easy to eat and everyone I've given it to says its yummy.

PS I suggest you post this in the recipe section and look through the Pesach recipes there as I recently found a few cake/cookie recipes there.

Thank you so much for that marble cake recipe OOTBubby! I am really looking forward to tryingt it.
I have been looking for more of a variety of no egg separated cake and cookie recipes. (We make chocolate brownies, Tollhouse cake (like your blondies), and almond cookies.)
I'd love to make a chocolate version of the almond cookies as well (without separating any eggs.) I will be working on that.

we use nuts, oil, potato starch, cocoa, but not much else processed so the baking soda, choc syrup, and pudding are out.

Would you like my recipe for the hazelnut/chocolate slice. If you can't buy ground hazelnuts, you can always grind them or maybe substitute with other nuts? It is quite easy and always comes out good only thing is it does have separated eggs.

I omit all baking powder, and the cakes still come out fabulous.
As for choc syrup for the marble cake, you can either just use a few tablespoons of cocoa mixed in to 1 cup of the batter like I do all year round when making marble cake, or else you can make your own choc syrup using cocoa and sugar. fiddle has a nice recipe.

While they're all good, the one that is really outstanding is the chocolate cake I posted (its worth separating the eggs). It almost tastes like a Dunkin Hines Devil's Food cake.

Here's what I use:
Eggs
Oil
Potato starch
Cocoa
Nuts
White sugar
Salt
Grape juice
Orange juice
Lemon juice
Grapefruit juice

And I only use the potato starch, cocoa, and sugar before pesach starts. After that its only boiled sugar. So what ever I make has to be able to last the whole pesach.

These are delicious. Just don't use walnuts or they will be bitter.
You can leave out the vanilla (you can do that with any recipe.)
And you can omit the coconut - like we do.

Should I ask a silly question? Do you eat gebrokts? If you do I have a great cake recipe. We eat gebrokts but don't use potato starch or cocoa or oil so recipes are quite hard to come by.

according to my notes I use the same amount of potato starch as the flour. And probably used rich's whip (or equivalent) for the milk. almond milk should work well too.
