Mine is just slightly different than busydev's:

Pineapple Kugel

4 eggs
1/2 cup sugar
1/2 cup oil
1/2 cup flour
2 tsp. baking powder
1 tsp. vanilla
1 can crushed pineapple, drained

Preheat oven to 350. Drain pineapple, mix with everything else. Pour into an 8 inch square pan and bake 45 minutes.

Variation: Pour into an unbaked pie crust or mini pie crusts. It tastes really good in a pie crust!

Mi7ne is also similiar but slightl diff.. its my fav kugel!
1/2 c flour
1/2 c sugar
1/4 c oil
3 eggs
1 can crushed pineapple drained
Mix together pour into a round pan, sprinkle cinnamon on top and bake for 40 min covered and 10 min uncovered.
Note: I like to use a can of sliced pineapple and the blend it with a stick blender it only takes an extra min but it comes out smoother and better its also very hard to drain a can of crushed pineapple so sometimes its too liquidy otherwise...

There is one that is basically pineapple bread pudding in Kosher Pallette 2. It is called 'Pineapple Rounds'. If you want the recipe, LMK.
