Does anyone have a good on the bone chicken and rice recipe with specific measurements (or at least specific ingredients - not just spices). I tend to find that the rice tends to take on a boiled chicken taste that I dont enjoy. Any recommendations?

If the rice has a boiled chicken taste, then there is probably not enough salt and spices mixed into the rice itself.
I'll try to pull up an exact recipe for you.

1 cup of rice mixed with one cup of water and one can of mushroom soup. put peices of chicken on top and sprinle some onion soup mix on top. bake covered at 350 for about an hour and a half and then uncovered for about 15 minutes. delicious and easy

1 onion, chopped
a roaster cut in 1/8th, skin and visible fat removed
2-3 cups of rice
1/2 tin tomato sauce (or 1 cup pasta sauce)

Rinse rice a few times till the water comes out clean, then let soak in water for 20-30min. In a heavy-bottomed pot with a lid, sautee onion with a small amount of oil and salt till golden but not burned. Add roaster and cook for 5-10min. For each cup of rice, add 1 cup water and bring to boil. Add tomato sauce. Adjust seasoning, add chicken soup powder/cube if necessary. Tip in rice, lower flame to the lowest, cover with a lid and let simmer for 25min. Don't open the lid during the process. Turn off heat and let the rice steam for another 10-15min. Fluff up before serving. This is great for shabbat--like the crusty bottom formed on plata. You can tweak the spice--hawaj, turmeric, cinnamon, allspice, cardamon all goes well.
