This is because the eggs stood too long. You need to whip up the cream (Rich's) first and only once that's done do you beat the eggs because they have to be added IMMEDIATELY. Also I haven't seen the full recipe but if you are using yolks you might want to leave them out completely as they tend to separate or at least cut down the yolks to two. Also instead of using sugar use an instant pudding mix as that gives a very good flavor and thickens everything up nicely.
