Already? I have some veggie soup in my freezer that my mom made when she was here, so that will be for the evening. Chicken something. Carrot kugel. Something simple and not too patchke-y. I love to cook but I'm working erev chag.

Um....

I'm thinking orange soup, regular salads (cabbage, egg, etc)
Pineapple chicken at night, snitzels by day, maybe a chicken soup for the day.

Sides carrots, potato kugel, rice, some veggie, maybe a brocolli kugel

Specific, eh? I'll be watching for ideas Smile

Ugg.. my fridge is still full from Rsh Hashana.
Basic Ideas I had though: Stuffed cabbage, rice with craisins and nut, tongue, stuffed schnitzel.

I have the following in my freezer: roast, brisket, corned beef. Tomorrow I hope to make schnitzel and beef stroganoff. I also have chicken soup, kreplach, cabbage for noodles and cabbage, and soup lukshen in the freezer. I am debating whether I should prepare stuffed cabbage or forget about it.

Lest you people think I am nuts or trying to compete with superwoman, I hardly had to cook for R"H because dh wasn't home and we were out for three seudos and we are going away for Sukkos, so I need to cook in advance and freeze.

I've started getting nervous because I hate being pressured to cook EVERYTHING during those few days b4 Succos after YK.

Ok, so I made my tentative menu. Here goes...

Wednesday night:

apple raisin cinnamon challah
gefilte fish
butternut squash soup
garlic and cracked pepper meat
garlicky green beans
mushroom kugel
scalloped potatoes
mint chocolate chip ice cream
peanut butter brownies

Thursday:

Eating out

Thursday night:

veggie kabobs
b.squash soup
chicken
shnitzel
rice with fried onions and mushrooms
veggie rolada
broccoli kugel
bissli salad

Friday:

strawberry soup
tender stovetop meat with red velvet sauce
kishka stuffed shnitzel
broccoli kugel
yerushalmi kugel
carrot muffins
deli roll
salad
watermelon and cherry cobbler

Friday night:

gefilte fish
chicken soup with kneidlach
red rice
saucy with slivers green beans
chicken with potatoes - any ideas for a type of chicken??
carrot muffins
apple pie ice cream

Shabbos day:

individual fish wellingtons with dill sauce
liver
cholent
kishka
onion kugel
overnighted potato kugel
veggie rolada
salad
mint chocolate chip ice cream and fruit

When we planned our rosh hashana menu, we planned straight through succos-so heres ours:

Pumpkin stew
corn kugel
farfel & bowties
tomato salad


Lazagna
salmon
cucumber salad
red cabbage salad

stuffed cabbage
potato kugel
sweet lukshen kugel
A veggie (undecided as of yet)

eating out

baked gefilte fish
chicken
leftover sides (or rice under chicken)
Squash

fish
chulent
grilled chicken salad

Shalosh seudos is tuna and egg salad and other leftover salads

Some things I've made already;

Chicken & Potato sacks - need to make a sauce
2 tone courgette & kishke kugel
apple turnovers
compote
chicken stuffed with kishke rollups
mishpacha apple chicken (made for rosh hashana put half in freezer)

Some ideas to make:
Oatmeal, apple and cherry kugel (husbands suggestion)
veal roast
meaty lasagna rolls with veg sauce (need to get sisters recipe)
spring rolls (anyone have a nice easy recipe?)
I need a nice soup idea, besides for chicken which I will make anyway
Deli roll
Chef's salad
cabbage croissants
chocolate chip cake
pastrami&chicken danishes

Need some good tasty, not too complicated ideas

The peanut butter brownines that I am making are so simple and HEAVENLY!!!!

PB brownies:

4 eggs
3/4 c. cocoa
2 c. sugar
3/4 c. oil

Mix those etogether with a fork.

Add:

1 c. flour
1/2 tsp. salt
1 T. vanilla sugar

Mix weel, pour into a 9 x 13 and bake at 350 for about 20-25 minutes.

In the meantime, combine 1 c. melted chocolate chips* and 2/3 c. peanut butter.

Spread on top of brownies and refreidgreate until firm.

*The easiest way that I have found to melt chocolate with no mess is to do the following:
1) Put the c.chips in a little sandwich bag.
2) Boil up some water in the kumkum (teakettle/urn)
3) Put the bag in the water and leave some of the plastic bag hanging out, and close the lid on the bag (which makes sure that the bag does not completely fall into the water.)

After about 4 minutes, it will be completely melted.


Veggie Rolada

2 potatoes, peeled
2 sweet potatoes, peeled
2 carrots, peeled
1 onion
1 red pepper
4 eggs
1/2 c. oil
3/4 c. flour
1/2 Tbsp - 1 Tbsp parsley flakes
salt and pepper to taste
1 tsp. chicken soup mix

Slice the veggies thinly in the food processor. Mix them together with everything else.

Line a baking sheet with parchment paper and spray with PAM. Pour the mixture and spread evenly.

Bake at 350 for about 40 minutes.

Roll it up jelly roll style while still warm, using the paper to help you. When it has cooled completely, slice it into 1" thick slices.


Bissli Salad - from here:

romaine lettuce
cherry tomatoes
purple onion
1 bag crusshed Bissli (I used BBQ)
(I also added chunks of avocado)

dressing:
1/2 c. oil (I subbed some with water)
3 T. mayo
4 T. sugar
1 tsp soy sauce
1 tsp/ mustard
1 tsp. salt ( I would use less next time - it was too salty for me and I am not sensitive to salt at all...)
1/2 tsp. pepper
1/8 c. water

The scalloped potatoes recipe is the one from Family First. It's here on the site somewhere...

wow I'm feeling popular today! Wink

I use my regular ice cream base for mint choc chip ice cream, and I add min exrtact, green food coloring , and choc chips.

Ice cream:

In a mixer, beat 6 eggs for 15 minutes. Lower speed and gradually add 3/4 c. sugar. Add 2 small Rich's whips and continue to beat until fluffy and whip thickens.

I add the extract and f.coloring with the whip and the chips at the end.
