Avocado and Quinoa Salad
(disclaimer; I have not tried it, but I like all of the ingredients, so how bad could it be ?)
Salad:
2 cut up avocados
1 cup quinoa, red or regular
cut up tomato
diced onion, red if possible
2 basil leaves, crushed
Dressing:
oil
salt & pepper to taste
garlic
2 limes, juiced
Cook your cup of quinoa in 2 cups of water until done. While it cools, gt your veggies ready and add with dressing. Eat cold.

Made this last night and we loved it!! thanks so much for posting.
(I used one lemon instead of the limes b/c that's what I had and limes over here are crazy expensive - it was yummy!)
Perfect for this crazy weather.
