Anyone have any good recipes that just have you cut up the zuchinni into pieces rather than puree it or grate it? I've tasted this before, and liked it, but haven't found a recipe for it.

I've made one a few times by cutting it, but I looked through all the cookbooks I use and I can't find any like that. What I probably did was, just wash and cut it instead of shredding it using any of the recipes as long as it's for ones that don't require cooking it first.

this is great is and is also delicious when served at room temp (shabbos day)
6 large zuccinis
Slice them thinly and sautee
in a separate bowl mix:
1 cup mayo
1 cup water
1 package matzah ball mix
5 eggs
1 tbsp onion soup mix
salt & pepper
Lightly toss in the sauteed zuccini and put it in a 9x13
sprinkle cornflake crumbs ontop and bake at 350 for 45 min

I've made this. I sliced the zucchini into very thin half moons, and then in half again. (thinly quartered slices.)
Instead of the onion soup mix, I just added more salt to taste.

I make the one that ra_mom posted above- it is so easy and everyone loves it. MY only change is that I don't use onion soup mix- I saute a few onions in olive oil and add instead.

you can add ingredients to mashed zuchinni which was cooked or steamed. breadcrumbs, eggs, oil, salt, pepper, sauteed onion.

the kosher pallette has a yummy zuk kugel using puff pastry dough if you want the recipe let me know and I will try to post it later. But the general idea is saute vidalia inion with zuk than cool it off add egg flour chicken consome and you put dough down bake it partially than pour" mush" over and add dough on top and bake.

This came out SO good! I made 2 changes to the recipe above though - I sauteed the onion (per mommy24's suggestion) instead of the onion soup mix and I baked it for much longer - I would say an hour and a half. After 45 minutes it didn't look ready to me.
