1 can or container of chick peas
1 can of corn
1 can of peas ( so normally I dont like peas but its actually good in here)
1 Red onion
1 red pepper
1 green pepper
Olive Oil
Lemon Juice ( about a tablespoon and a half)
Salt
Pepper
And chopped up fresh dill
This is more of a dip than a salad but we looove it
2 firm tomatoes, cut into small chunks
a couple of cloves of fresh garlic diced ssmall
1 jalapeno pepper diced small
Olive Oil
Salt pepper
Hot pepper flkes
Sometimes when I don't feel like chopping I blend it all in the blender to make it more saucy like...

Portobello Mushroom Salad
1 Tbsp olive oil
6 oz. sliced Portobello mushrooms
10 oz. romaine lettuce OR fresh baby spinach leaves
1 red onion, thinly sliced
10 cherry or grape tomatoes, halved
Dressing:
1/3 cup olive oil
2 Tbsp balsamic vinegar
2 Tbsp mayo
2 cloves garlic, minced
1/2 tsp sugar
1/2 tsp Kosher salt
Saute mushrooms for 5 minutes in pan heated with olive oil. (Or place mushrooms in a pan; toss with olive oil. Roast for 15-18 minutes at 375 degrees, until mushrooms are soft.)
Place romaine, onion and tomatoes in salad bowl.
Place dressing ingredients in a jar and shake very well until smooth and creamy.
Right before serving, pour dressing over salad. Then spoon mushrooms over salad. Toss gently.
(Note: Okay to omit Portobello mushrooms and use a full container of grape tomatoes instead.)
