What's your latke recipe?

I want to make really good latkes tonight. I feel like putting in leek and onions and potatos in the mixture. Does anyone have a good recipe??

I dont really have a recipe!! I think its about 8 potatoes to 6 eggs, that calls for about a tablespoon of salt, and a little less than a cup of oil. I always hand-grate them but Im sure if you do food processor itll be ok too, I just think the consistency is different. I've never added leeks, but sometimes to that 8 potatoes I add 1 white onion, that I do in the food processor, and thats it, make sure the oil is hot before you fry. good luck Smile

I use the same recipe I use for potato kugel. The only difference is, for kugel, I process and grate for latkes. I like grated kugel, but my kids don't.

same here. Except I like both types of kugel but dh only likes mushy kugel.

I just do same amount of potato and eggs
add salt, black pepper ,garlic powder,oil
I don't grate it I use the machine.
who ever taste it loves it.its plain simple and delic.

For more consistency, my mil adds some challa soaked in water, squeeze the water out, and mush in there too.

in my opinion the trick to awesome latkes is not to put in any flour, matza meal, etc. just potatoes, eggs, and onion. as for leek, never tried it but my mil made leek pancakes for rosh hashana since its one of the simanim, and they were divine. couldnt hurt to try!

Made some pretty good latkes tonight -

8 potatoes
1 zuccini
2-3 onions
10 eggs
2-3 tbsp salt
sprinkle of black pepper
around 1-2 cups flour

Grate in my cuisinart the potatoes, zuccini, onions
Add to a bowel, mix in eggs salt pepper and flour

made latkes and squeezed out excess liquid and fried.

Crispy on the outside, soft and yummy in the inside

A lot of eggs- bec. they keep the color even if you have a extra for the next day or two.

Enjoy. I can't stand and fry every night. so made a nice amount tonight for tomorrow as well.
