We had some dips from a catering company for Pesach: beet salad, babaganoush, olive dip, matbucha, and Moroccan carrot salad.

There’s still a lot left of all of them and I want to use them for the last days of Yom Tov. Will they keep in the fridge until then or can any of them be frozen?

They'll degrade in the freezer so I'd use them from the fridge until they last.
Matbucha is something that will Freeze well.
