Fruit salad in yoghurt.
Today I did strawberries, mango, almonds plus yoghurt, but you can choose any fruits you want: oranges, pineapple, mango, blueberries, etc...

Pesach pancakes! Dissolve 2 spoonfuls of potato starch in a little water. Add 2 eggs and 2 spoonfuls of sugar. Mix, fry, flip when mostly set. Fry another minute or 2 on other side. Looks like an omelet but tastes l like a pancake. My kids request it for breakfast during the year when they want pancakes but I don't have time to make a whole batter...

Well thank you very much for this! My very picky 6yo was kvetching a good chunk of yesterday for cornflakes and pancakes. She knew she wasn't getting them but was pretty frustrated by her options. I'll have to give this a try!

Let me know how it goes! I usually make one big pancake ( the whole mixture into a frying pan) and I cut it into "pizza slices"

Wow! This is so easy!! I’ll definitely try this out tomorrow for breakfast

In the end I did this one which I must have seen on a different thread as I don't see it here.

Cottage cheese latkes

One cottage cheese
Half cup sugar
Half cup potato starch
Half cup almond flour
4 eggs

Blend with hand blender
Use oil spray and fry in Betty Crocker

This kid won't eat cottage cheese anything, but in this recipe it was blended so it was enough like regular pancakes that it worked beautifully B"H! Next time I might try a bit less sugar as it was very sweet. Teacher_EW, I might try your recipe still when I'm out of cottage cheese. (I try to get as much nutrition into this kid as possible!)

These are better than my Chometz pancakes:

Pesach Pancakes Cheese Latkes

1 C almond Flour
1/2 C potato starch
1/4-1/3 C sugar
1 t baking soda - optional
1/2 C cottage cheese
1/2 C Greek yogurt
4 eggs

We do hash browns with reg potatoes and sweet potatoes, scrambled eggs, avocado, matza with cream cheese / butter, all kinds of cheeses and juice. So filling and delicious. It's only a couple of days you can do the same thing each morning.

Dip matza in milk or egg wash and cover with a paper towel alternating layers matza and a paper towel. Cover and leave in the fridge for a few hours. They will become pliable like a tortilla. Fill with scrambled eggs, meat or anything else and brown and fry them with oil on a pan.

She clarified that only means water and matzo. Matzo brei can be made just with eggs and milk (and I add sugar and cinnamon) just soak a little longer to soften.
