If I don't eat gebrokts during pesach, can I make a gebrokts cake to eat before pesach? (Using my pesach kitchen)

This is not a halachic shaila, it's minhag. We have no way of knowing what your minhag is. Youd have to check with your husband/family.

How long before do you stop eating baked matza products? I know it's a halacha erev pesach but never heard of that minhag starting earlier.

When I grew up, we didn't eat gebroks on Pesach and we stopped eating anything with matza on rosh chodesh nisan.
We eat gebroks now and we stop eating matza only on erev pesach.

Halachically, you are allowed to eat matzoh products erev pesach. Some people don't but it's a chumrah.

We eat gebrochts, but I don't like matza meal cakes. I make one or two in case someone wants to make mezonot, normally if they make kiddush early. We don't eat them before Pesach, so they are normally one of the last things I make erev Yom Tov.

While I don't like the texture very much, they have a special smell of their own that makes me feel that Pesach is really here.
