Lamb shank

Every year I buy just a bone. This year I could only find 3 lamb shanks with the meat (from Moishas).
Please help with how to cook!
I’m probably going to debone one and bbq the bone, not sure what to do with the other two and the meat. It’s already frozen and defrosted so has to be cooked by tomorrow.
Any advice please share!!
