There are lots of gluten-free flour blends available during the year that are made with kitniyos--combinations or rice flour, corn flour, and other ingredients. So the GF baked goods (and other products, such as pasta) during the year are very different from the Pesach ones made from potato starch and almond flour.

All the kitnios, gluten free bread and pasta, gluten free wheat flour, I’m sure there’s more I’m not thinking about.
We also don’t eat fish or dairy on Pesach, and very limited fruits and vegetables.

I bake gluten free but my year round stuff is much better cause of oat flour etc
