I want to start ASAP.
Can they be made in the oven?
Large cookie sheet
Can it be done on parchment?

I would imagine not.
It's time consuming but they need to be done on the stove.

I use two pans. The first thing I do once my kitchen is ready is make crepes (pesach noodles). 4x recipe, 20 eggs.

No, you cannot make crepes in the oven. Can only be done in a frying pan on stovetop. Use non stick pan and oil spray instead of oil if you want low fat.

I use a crepe maker, it’s much easier and faster

For larger crepes I do them in my electric frying pan.
Still time consuming, but a bit quicker than a smaller frying pan

A griddle/hot plate works great for large crepes!
When one side is done, cut I half (in 2 squares), then flip
