I don't have many ideas but either club steak and potatoes/onions in pan or the same with chicken bottoms. I also make yapchik before yt and will put it frozen on 260 in the oven while we're out and serve that with a veg soup and fresh salad.

Breakfast
Eggs veggies avocado butter matzah
Lunch
Chicken or salmon
Potatoes soup
Dinner
Something slow cooked
Snacks: twelve billion bags of potato chips
Treats: cheese snack
Yogurt pouches
Cracked nuts
Cake if I’m feeling adventurous
I find I cook all day long and no matter what there’s always someone hungry

My kid who usually eats a bagel and cream cheese switches happily to matzah and cream cheese. My child who refuses to eat breakfast every morning and is sent off to school after a cup of soy milk and a string cheese (she's lactose intolerant but can have cheese) will have her cup of soy milk and string cheese. Except on shabbos we have shabbos yogurt so they can help themselves

Almond flour pancakes
Roasted potatoes

I bake many things so they eat that. Idk. We don't stress.

I don't give my kids much dairy but maybe matza with melted cheese.

All of the above!
You can add some Cho chips to vanilla yogurt
Muffins/cupcakes
Healthy Cheesecake or make them in muffin tins
Matzah grill cheese
And we only buy whole wheat matza
