But we hold that skin on Salmon is ok

So yes we buy at aldi and TJ

Yes. Plain salmon with skin on.
No spices unless there's a hechsher.

Salmon is a kosher fish. Most kashrus agencies advise that it's fine to buy raw salmon anywhere as long as there are no added ingredients. If you prefer, you can rinse it off before cooking.

I actually heard that it's not so simple as it's possible to color a different fish pink to make it look like salmon.

That's why people specified with skin on, so you can see whether it has scales. If it does, it doesn't what the fish really is, it's kosher anyways.

While this is true, only kosher fish accept the coloring. So even if it's not salmon, it's still a kosher fish.

The article I was reading explained that they have a new process that can color any fish, hence the concern.
