When making Esty Wolbe's faked ziti, or any mac n cheese
what kind of cheese actually melts really well besides american cheese?
I hate seeing pieces - can't really explain but some cheeses melt horribly

I never really noticed that some don’t melt well… I use Muenster, mozzarella, pizza cheese. They all work for me.

Shredded pizza cheese (it's a mix of cheeses)
Or best yet buy a block of cheese and shred yourself- no added starches/ stabilizers that way (they need to add that so the cheese doesn't stick in the package).
