Can I freeze zucchini kugel? What about apple crisp?
What is the best way to defrost?

Yes to both, but the crisp might get mushy and need some revitalization in the oven after it’s defrosted.
You could fridge it for a day or leave it on the counter for a few hours to defrost.

I don't have it down to a science at all & it really depends on size/exact nature of ingredient(ie Zuccs very moist) but I freeze/reheat most things
You can try to put frozen kugel into cold oven (skip preheating) & heat up at around 325 for maybe 30 min to an hour if on bigger side, keeping uncovered to remove excess moisture & help crisp up a bit as much as it can

I've frozen zucchini kugel and it was fine. Maybe reheat from frozen.
For apple crisp I would freeze the apples sliced in the pan and the crumbs separately in a bag and assemble before heating. Less likely to get soggy that way
