I’ve been making a broiled salmon with a maple glaze—maple syrup, soy sauce, sesame oil, grated garlic and ginger. Marinate and broil for 11 minutes—I do this in the toaster oven.

Is this sweet enough?

Almost Aunt Sandy’s Sweet and Sour Salmon

All my other relatives served gefilte fish at holiday meals, but not Aunt Sandy. Instead of breaking the fast on Yom Kippur with gefilte fish, kugel and bagels and lox, she made potage Parmentier, pesto pasta salad and, her masterpiece, sweet and sour fish in a shimmering aspic.

In my version, I reduced sugar and substituted balsamic for the sharper wine vinegar. I added raisins and sliced lemons, an idea stolen from a similar recipe I found online. I eliminated the peppercorns, which were unpleasant to crunch, adding aromatic thyme instead.

Finally, because I didn’t want aspic, I substituted prepared fish broth for the mess of boiling bones. The broth was light and refreshing with a gentle acidity that was balanced by the sweetness of the raisins. And the fish was succulent and rich and suffused with flavor.

6 cups fish broth
3 garlic cloves, smashed and peeled
1 bay leaf
Salt
freshly ground black pepper, to taste
1 small red onion, thinly sliced
½ bunch thyme
8 center-cut skin-on wild salmon fillets, 3 ounces each
½ cup golden raisins
1 small lemon, thinly sliced
¼ cup balsamic vinegar
2 tablespoons light brown sugar
Challah, for serving

PREPARATION


Preheat oven to 350 degrees. In a large pot, simmer fish broth with garlic, bay leaf and salt for 15 minutes.

In a 9-by-13-inch baking dish, scatter red onion and half of the thyme. Place salmon on top, skin side down, and season with salt and pepper. Scatter remaining thyme, raisins and lemon on top.

Stir vinegar and sugar into broth and let simmer for 1 minute to dissolve sugar. Remove garlic and bay leaf from broth; carefully pour broth over fish. Bake for 8 to 10 minutes, until fish is just cooked through to taste. Serve hot, warm or cold, with challah for dipping into broth.

This is a very traditional sweet fish dish. It is made with cod but you could substitute skinless salmon

Sweet garlic salmon from BY cookbook:

1/4 c ketchup,
2 Tablespoons brown sugar,
6 cloves garlic,
2 tsp soy sauce.
Sprinkle with sesame seeds.

Bake 350 for 20 min covered and 10 min uncovered.
Adjust the recipe cuz this is for 6 servings

I never cook with recipes, but for two servings abt one T of the oil/soy/maple, one garlic clove, same amount of ginger

LEMON-MAPLE GLAZED
SIDE OF SALMON

1 (2-3-Ib) side salmon sea salt, to taste paprika, to taste onion powder, to taste
• garlic powder, to taste

Lemon-Maple Glaze
1/4cup pure maple syrup
2 Tbsp apricot jam
2 Tbsp lemon juice
1 Tbsp ketchup
3 cloves garlic, crushed
1 frozen dill cube
½ tsp kosher salt
¼ tsp coarsely ground
black pepper
dill fronds, for garnish,
optional
prepare the lemon maple glaze
Whisk all ingredients until relatively smooth. Set aside.
prepare the salmon: Preheat over 425 line a baking tray with parchment paper; spray with nonstick cooking spray
3. Place side of salmon, skin-side down, onto prepared sheet. Dab salmon with a dry paper towel. Season to taste in listed spices or use your favorite seafood seasoning. Brush; generous amount of glaze onto fish. Allow to rest for 10 mage
4. Bake, uncovered, on the middle rack for 10 minutes. Remore baking sheet from oven; baste fish with a generous brushing glaze. Return pan to oven. Repeat basting every 10 minuts. total baking time of 30-35 minutes. Remove from the oven baste one final time (see Tip).
5. Serve warm or at room temperature. Garnish with dil, it desired

-Variation
This recipe can be made using salmon fillets; bake for 15-17 mine.

I marinate salmon in 3/4 cup honey 1/4 cup soy sauce for at least 20 minutes, sprinkle with everything bagel/ challa topping and bake for 20 minutes on 400.

Then Mix equalParts soy sauce and duck sauce
Pour onto salmon
Sprinkle sesame seeds if you like
Baste halfway and drizzle extra sauce from pan on fish when serving
Bake on 400 for 15-20 mins depends on thickness
Can be served warm room temperature or cold
Optional serve with wedge of fresh lemon
