Actual carp probably can’t be fileted because of the bone structure but black cod can.

I saw filleted carp in freunds fish store for pesach, a time of year when it’s used by many people, like our family

They generally don't sell carp fillet since most people want it cooked traditionally with bones. They're not used to filleting it.
Reach out Freunds if you want a special order.
