Avoiding off Chicken Soup

I made a huge chichen soup batch. But when we tasted some on shabbos, it tasted off and different. Like it was bad
I used a whole defrosted chicken to make the soup. I didn't notice any bad smell when I washed the chicken or started preparing it.

What steps can I take when making chicken soup, to avoid soup that is off?
Any special advice how to clean, wash the chickens or how to cook it, to make sure they don't go bad?

When was it made? How was it stored? How long was it left out for when out of the fridge? How was the chicken defrosted?

Defrosted in fridge and not left out of fridge for longer than max 1h, before cooking it.
Done Thursday, and eaten on Friday night.
All done the same way as I usually do.

I googled and saw some say to wash the chicken with vinegar, salt and water. Anyone do this before cooking, baking the chicken?

I would think it has to do with cooking on too low a flame or sitting out too long to cook.

It might be cooked too long-sometimes if I cook mine too long it takes on an almost burnt taste.
