Does anyone have a tried and true recipe for flaky dough /puff pastry dough that is simple to make ?
The store wants close to $10 for a pack of 36 3” squares . I need to make over 100 bourekas and really don’t want to spend that kind of money on dough.
Is it hard to make ? Is it worth the time and effort ? And do you have a good recipe that doesn’t have a vinegar after taste ?

Buy from the store, puffed pastry is a long, time consuming process.
It involves rolling out many many many layers and getting them really thin, and folding over many many times
Really not worth making when you’re making a whole yontif

What if you buy a big sheet and cut the squares you need? Less work than starting from scratch but may be cheaper than the squares. You can also check if the non-Jewish brands are cheaper

I sometimes make puff pastry dough. I have a fairly easy recipe but it takes a whole day and I would never make it in big quantities. Check with your grocery store or bakery if it is possible to place a bulk order.

You could make Turkish style buretas which uses a regular dough instead of puff pastry.
Dough - makes 18
21/2 cups flour
1/2 cup oil
1/2 cup warm water
1/2 tsp salt
Mix the flour and salt
Mix in the oil until you have a pebbly texture and all the flour has been mixed into the oil
Mix in the warm water - do not over work - do not need- just mix it in
Let dough rest for 15 minutes
Then form a log
Cut the log into 3
Cut each piece in 1/2 and then each 1/2 piece into 3
For a total of 18 piece
Roll and then flatten with your hand
Place filling in the middle
Fold over- looks like 1/2 a moon
To close place the bureta in your hand pinch and fold up
Bake

I've made my own dough for meat knishes but to get the puff pastry for deli roll... not sure what choices there are.
