This was a very good crockpot recipe.

You can shred the chicken and use it for wraps/burritos

Easy Chicken Mole

makes 6 servings

You can use this same sauce with bone-in turkey breast, which is traditional or beef chuck. You can also de-bone the cooked thighs, shred the meat, stir it into the sauce, and use it as a taco, enchilada, or burrito filling. Offer a salad of sliced oranges, red onions, and avocado alongside.

ingredients

1½ cups (9 oz/280 g) crushed fire-roasted tomatoes with juice
1 yellow onion, finely chopped
¼ cup (1½ oz/45 g) chipotle chiles in adobo sauce
¼ cup (1 oz/30 g) almonds or walnuts
¼ cup (1½ oz/45 g) raisins
1 oz (30 g) bittersweet chocolate, finely chopped
3 tablespoons canola oil
1 tablespoon fresh orange juice
1 clove garlic, coarsely chopped
½ teaspoon ground cumin
½ teaspoon dried oregano
½ teaspoon ground cinnamon
Kosher salt and freshly ground pepper
6 large bone-in chicken thighs, about2½ lb (1.25 kg) total weight, skinned

step by step

PREP In a food processor, combine the tomatoes, onion, chipotle chiles and sauce, nuts, raisins, chocolate, oil, orange juice, garlic, cumin, oregano, cinnamon, ½ teaspoon salt, and a few grinds of pepper and process until smooth, about 1 minute.

SLOW COOK Put the chicken in the slow cooker and sprinkle evenly with ¼ teaspoon salt. Pour the tomato mixture evenly over the top. Cover and cook on the low-heat setting for 6 hours. The chicken should be tender and opaque throughout.

SERVE Divide the chicken among individual plates. Stir the sauce until smooth, spoon over the chicken, and serve right away.
