I used 2 Grain Brain varieties, not to bad
Shibolim imported from Israel, results in a more fluffy challah,
Has anyone tried the wonder flour brand ?

Wonder mill 6lb white spelts recipe on the bag is the best spelt I have ever made!!
The 5lb recipe is diff and not as fluffy
I substituted half the sugar for honey- I heard that honey makes the challah less crumby

2 My MIL used to suffer from heartburn, she cut the yeast and sugar by 50% , let the dough rise longer , pain is history.

I use wonder mill and the fam likes it better than grain brain.
