We are having about 16 people for seder (a few kids in that mix), what size pot for chicken soup do I need for 2 seder meals? I feel like 12 qt seems small once you add in all the veggies and chicken but is 16 too big?

Make the 16 so you have extra for Friday night or first shabbos after yom tov. You won't want to cook that Friday.

16 quarts. But you don't have to buy a new big pot. I find it easier to make soup 2x, then to scrub such a huge pot under the right faucet, and to store it.

Agreed. A full freezer is a beautiful thing when you're hosting meal after meal.
