Please help me with ideas on how to turn leftover/fresh chicken broth into a meal for my family.
(The simpler the better!)

I would add baby carrots and cook them in the broth, and serve with egg noodles. Assuming that wouldn't work for your kids.

You can make it into egg drop soup.
4 cups broth,
1 tbsp soy sauce,
2 or 3 eggs
Heat first 2 ingredients until boiling. Stir eggs in a cup and slowly add, stirring with a fork, so ribbons form.
Optional fillers:
A cup of corn
Can of creamed corn
Shredded raw chicken dipped in corn starch slowly added while it boils (before egg)
Noodles
Crispy wonton noodles

-Use it instead of water when making rice.
-Add soy sauce, minced garlic, minced ginger, and the spice packet from a package of ramen. Add ramen, cook for 5 minutes, and serve with thinly sliced chicken and veggies of your choice.
-Use in pasta sauce
-Add veggies and turn it into a pureed soup

I love shredded chicken barley soup.
Sauté onion and celery. (Optional)
Strain broth into pot.
Dice in leftover carrots and other veggies from soup or use fresh ones if don’t have.
Add chicken cutlets and barley (1/2-3/4 cup)
Cook until barley well done.
Shred chicken cutlet and add back to soup.
May need more salt

Is it possible to just add a few raw chicken cutlets into the soup, and cook? How long would I cook for?

There is a recipe I use

I find the barley takes longer then the chicken cutlets.
(I don’t find it needs 3-4 hrs to simmer. More like 1-1.6 hrs)

Hot and sour soup - similar to egg drop soup above. You can add tofu/small pieces of chicken breast/noodles/shiitake mushrooms.

Cutlets dry out very quickly, even in soup. I would add last and cook until JUST done.

The raw chicken cutlets need 15-20 minutes, slice or shred them after they’re cooked. Don’t cook them longer or they’ll be dry and unappetizing.
You can coarsely grate a raw carrot, slice or chunk raw zucchini, and add a handful of thin noodles. Barley needs at least an hour of cooking, so if you’re using that add the chicken at the very end after the barley is soft.

Just add some raw chicken cutlets, diced veggies, and raw white rice to the chicken soup. Bring to a boil. Lower heat and simmer for 25 minutes. Shred chicken breasts and put back in soup. Serve.
