2 boneless chicken breasts cubed
1/2 cup thinly sliced carrots
1 cup fresh cilantro leaves (save a little for garnish)
1tbs soysauce
course salt
1/2 cup soybean sprouts
juice of 1/2 lime (save wedge for garnish)
2 kaffir lime leaves (take out before serving)
1 3" piece lemongrass thinly sliced
1 3" piece fresh ginger peeled and grated
3 scallions trimmed & julienned
1 tsp curry powder
1/2 tsp cumin
1 sm fresh thai chile sliced crosswise seeded & ribs removed
1 cup shitake mushrooms sliced
add water and boil in 3 qt pot
