my challah recipe calls for:
1/4 cup oil &
1 stick margarine
what can I replace the margarine with?how much canola oil?

How much flour are you using?
My recipe calls for 9 cups of flour and I don't use any margarine, just 3/4 cup canola oil.
A stick of margarine equals 1/2 cup, so you should probably use 3/4 cup oil altogether.

my recipe used about 10 ten cups and I use a 1/2 cup of oil

I say, stick with 3/4 oil. Your recipe calls for a stick of margarine, which equals a half cup and you're already using 1/4 cup. So you'll probably be fine if you use 3/4 cup.

In general, oil can be replace for margarine at the ratio of 7/8 cup (I.e. - 1 C margarine= 7/8 C oil). Although I usually forget, and switch it for equal amounts, and that works fine too.
BTW, you'd be surprise that most margarine recipes can be substituted with oil. We don't have kosher margarine here, so I try everything out, and it (almost) always works. (well, sometimes you need a bit of added creativity. . .)

I use half as much oil as my recipe originally called for and none of the margarine. maybe you could get a different recipe
if you want, you can substitute Earth Balance spread which tastes exactly like margarine, cooks like it (even cookies) and is completely non-hydrogenated
