I wasn't able to get fresh fish to make my own g. fish. I heard of falshe fish. 2 questions: How is it made & does it taste like fish?

It's made of ground chicken (and ground veal if you want, for a better texture because chicken is dry), potatoes, onions, eggs, potato starch if you use it. If you do it right and cook it in the same broth you use for gefilte fish, it tastes almost like real fish. I posted a recipe in the "I can't believe it's Pesachdik" thread.
