I shred the chicken.
Then in a frypan fry whatever veg you like. I usually use onions, leeks, celery, zuchini suash, peppers, shredded carrot. Add some chicken soup to the mixture once the veg are soft and the chicken.
Serve on rice.
It might sound a little interesting, but trust me its delish.
I also do this to extra chicken paprikash or any other chicken thats pretty simple.

Blend chicken, 4-5 eggs to a chicken, spices, form patties-coat in bread crumbs and fry. Kids love it! Best fresh out of frying pan. Can add shredded vegies.

Sautee onions and mushrooms, add shredded chicken, salt, pepper, garlic, parsley, dill cubes and a little chicken soup.
Serve over egg noodles = soupless chicken soup
Stirfy chicken + vegetables (onion, carrot, peppers, brocolli etc.), mix in soy sauce / teriyaki sauce and serve over rice / spaghetti
Mix in cumin and curry powder and serve in pita pockets with israeli salad = shwarma
Serve in wraps (with vegetables of your choice and a dipping sauce)
Roll out pizza dough into squares, spread on BBQ sauce, salsa, sauteed onions, peppers, shredded chicken. Fold over, brush with eggs and sesame seeds and bake = chicken knishes

Chow mein: Saute onions, shredded cabbage, celery, and mushrooms until cabbage is soft. Stir cornstarch or flour into chicken broth or water, season with salt and pepper. Add vegetables and shredded cooked chicken and cook for few minutes. Serve over rice. Optional : top with chow mein noodles.

We love these chicken crepes. (Makes a really nice appetizer for shabbos/yuntif.)
Chicken crepes:
mash the chicken with carrots from soup, add a little onion soup mix.
Crepe batter:
2 cups flour
1 tsp. salt
2 eggs
2 cups water
beat eggs and water together. mix in flour and salt. let stand for 10 minutes. grease a small frying pan with cooking spray. heat pan so pan is hot. drop 2 to 3 tbs. of crepe batter into pan. Tilt pan so batter covers bottom of pan. heat until middle of crepe looks dry and edges pull away from pan. Use spatula to remove crepe from pan. Drop 2-3 tablespoons in pan again. While this is heating, fill first crepe with mashed chicken and place on lightly greased aluminum foil for storage. Crepes can be frozen.
Serve with a mushroom sauce.

Shred the chicken with your hands. Saute peppers and onions and mushrooms. Add it to the chicken with some spices and mix. It's great plain or as a blintz filling.

I use chicken bones though there's still plenty chicken on there that I usually try to use up.

Slice an onion, sautée, add shredded chicken and any combo of the below: ketchup, honey, soy sauce, barbecue sauce, tomato sauce, jam, duck sauce, brown sugar, balsamic vinegar, onion powder, garlic powder. Cook until heated through.
Serve on baguettes with lettuce, tomatoes, pickles and cole slaw on the side. Or in pitas.
