First of all, moth things can be turned gluten free by using gluten free flour instead of regular. There are gluten free pie crusts, tart shells, etc. I don't know about wanton wrappers and egg rolls and puff pastry squares and that sort of stuff, but I'm sure it's all out there somewhere.
There is also gluten free gefilte fish.
Then there's other fish, gluten free pasta appetizers, salads, rice (although not everyone on a gluten free diet is able to eat rice.)

EVERYTHING!
do you want to make fish? salmon with teriyaki, mustard and honey, ketchup and mayo.
do you want something fruity? cold fruit soup, fruit salad with nuts and silan
do you want something doey? make pesach blitzes with veggie filling
do you want something meaty? baked eggplant slices with meat filling in between, liver on a bed of lettuce,
do you want something with veggies? fill avocado with potatoe salad, stuff portebello mushrooms with garlic.
I know making a meal for a gluten free quest can seem scary at first but really there is so much to eat.

Please watch out for soy sauce in the above suggestions. Check the ingredients; some contain wheat and some don't. Salad dressings too- modified food starch can be a problem.

I agree with the rest of your post, but I'm wondering if you meant to stay "oats" not "rice" in the above? Some people with celiac disease cannot eat certified gluten-free oats. I have never heard of anyone gluten-sensitive not being able to eat rice. (And I would think that would be a BIG thing for a guest to mention when they're telling about needed GF food)
